In the picturesque landscapes of Western Australia's Margaret River wine region,

LS Merchants emerged as a winery with a mission: crafting interesting, approachable, and most importantly, delicious wines while staying true to our belief that wine should be a source of enjoyment and not taken too seriously. Over the years, LS Merchants has become more than just a winery—It encapsulates the art of winemaking, honours the rich lands, pays tribute to the spirit of exploration, and brings together individuals who share these values and enjoy a grape related pun every now and then.

Our belief?

Each bottle tells the tale of our founder—a grape explorer with a deep respect for the lands, a yes man with an inability to sit still, an over-caffeinated wine wizard with an unwavering devotion to the craft. As you sip, join us on a journey through the regions, feel the earth beneath your feet, and reap the delightful results of our hard work.

That crafting great wines requires quality fruit and the expression of the unique terroir and climate where they thrived. Driven, curious and armed with years of wine expertise, Dylan embarked on an extraordinary journey to source the finest grapes from West Australia's diverse regions, beginning with Margaret River and expanding beyond as LS Merchants grew.

Each vintage, we venture north to the Swan Valley with its historic charm, gnarly old vines and locals who’ve aged like fine wine, south-east to the lush vineyards of Pemberton, where spuds and grapes grow side by side, onto Manjimup, the Blackwood Valley, and Frankland River, where ancient soils and winding rivers have infused the grapes with distinct qualities.

Over the years, LS Merchants has created lasting bonds with local growers and vintners. We swap stories, jokes, potatoes and share a deep connection to the Noongar lands, enhancing our understanding of the regions' heritage and deepening our commitment to the craft.

Back at the winery, traditional winemaking techniques, innovative methods, bold intuition and reckless experimenting all play a role in the making of our wines, ensuring the process is thrilling and unique each vintage.

The result is an extensive collection of handcrafted wines that showcase the beauty and diversity of South West Aus, each bearing the unmistakable mark of its region. So crack a bottle of LS and let’s go.

It all started with a phone call, Jay Beeson (the proprietor of Old Bridge Cellars) suggested that we make some old school Chardonnay. Not that old that it is bright yellow but just enough so it is ripe, rich and buttery with a good lick of new French oak.

In stepped Butter Barrels, we source the fruit for this wine about 3-4 weeks later than the LS Merchants Chardonnay allowing the fruit time to ripen up and get nice and peachy. Wild ferment in French oak, 40% new, with liberal stirring and a big dose of malo to boost up the buttery flavours.

Aged in oak before being racked, filtered and bottled.

Think yellow stone fruit, grapefruit pith, fresh pineapple and jasmine. Rich and full of flavour on the palate with a nice touch of oak and gentle acid giving the wine structure, depth and power! Drink now and over the next 3-5 years.

Passionfruit and gooseberry fizz with a hint of lemon and lime 🍋

Made from Sauvignon Blanc and a splash of Gewurztraminer, this bubbles is so damn slurpable you will wonder where the hole in the bottle is. Naturally bottle fermented, a small amount of harmless (delicious) sediment remains.

No sulphur. 100% natural.

2025 Die Berghain Riesling
$35.00

Margaret River isn’t well known for its Rieslings which is exactly why we wanted to make it. Fruit sourced from the loudest Wilyabrup vineyard you’ve never heard of; Maximaler Räve. Gently basket pressed and wild fermented on lees in foudre barrels.

Jasmine aromatics with a lime rind acidity and a touch of honeysuckle sweetness to pull it all together. A perfectly balanced off-dry style. Inspired by the German temple of techno, The Berghain and a love of riesling.

Eight vintages, countless raves in the vineyard - we’re taking a break from Die Berghain, closing a legendary run with the Wilyabrup vineyard that began in 2017. Hopefully it will be back!

Nab a bottle of the 2025 vintage as it bows out.

2024 'Natorious' Pet Nat
$35.00

The OG pet nat, our flagship sparkling.

As the years go on, we have worked at increasing the weight and texture of this wine. It feels as if the Chenin Blanc brings the weight while the Vermentino adds the acidity and saline texture. Fermented separately before blending in stainless steel and being spiked with some fresh Sauvignon Blanc juice to give the lil’ yeasties some sugar to turn into fizz.

Pet nat is an all natural style of sparkling, it has some cloudy sediment and can get a lil friendly when opening (read gushy) so to avoid any spillage put me on ice and flip my lid. Then enjoy some super delicious, fresh, green apple, pear skin and salty fizz. Best served ice cold with a bunch of mates, if you don’t know now ya know!

Unfined and unfiltered with no additions of SO2 during the making.

Total production – 120 dozen.
