90% fruit from our home vineyard Treeton Estate, meaning the majority of this wine is hand reared by some pretend viticulturists - A.K.A Dylan. With the balance coming from Torrent Wines up in the Swan Valley, adding a riper more rounded aspect to the wine. 2025 was a hot year meaning the body is full, the fruits are bursting, yet the crisp saline acidity completes this fresh example of a classic LS Merchants Chenin Blanc.

When building our Chenin Blanc, winemaker Dylan opts to create different blocks of wine. This is done by picking grapes at different stages of ripeness, from various locations, then fermenting and aging small portions of the wine in different vessels.

Our favourite toy in the winery got a workout here - an 1800L Slovenian Foudre saw some of the juice through ferment. Add to that some wild ferment in new oak barriques, a little touch of skin contact (7 days) sans plunging followed by maturation in old puncheons, wild ferment in stainless steel. Each small portion adds a new building block, eventually creating a wine rich with complexity.

Yellow stone fruits, nectarine skins, lifted spice and honeysuckle. Bold, tropical fruit meets tight citrus acidity. Matches up really well with any medium-full flavour foods, cheese, white proteins and good times.

Sourced from the Yallingup hills. Whole bunch pressed to a mix of new (25%) and old (1+2 year old) French barriques, wild fermentation and a small amount of malolactic fermentation before winter set in.

Made with Vouvray in mind, on the nose it presents lemon wood, brioche and a hint of brine, the palate is lush and rich from 6 months of battonage before being pulled into line by a lime rind acidity and the saline nature of the varietal. Fantastic match with chicken or white meats also richer seafoods.
