This is a pretty special wine.

Margaret River organically grown Mataro (or Mourvedre)

100% whole bunches, stems and all put into a 400L barrel through a small door. Turned daily and left to ferment.

Once ferment is finished, transferred to tank. Bottled early to retain its juiciness. Think Pinot x Gamay x Mataro, insanely bright and juicy with dark fruit and crunchy acidity.
